The shutter speed is fast with good lighting. And drops as the lighting power drops.

Are you really asking about "lag"?

Shutter lag time is one of the hardest specifications to find.
It appears that many camera makers really don't want to talk about it.

But we do:

Here is what I found for the cameras you listed plus one more:

Nikon 8700 - 0.2 and 0.5 second
Canon Pro1 - 0.1 and 0.6 second
Canon G6 - 0.1 and 0.4 second

We are dealing with fractions of a second.
The first number is the lag time after you have pre-focused the camera by pressing the shutter button half-way down.

The second number is the lag time if you just press the shutter button all the way down without pre-focusing. And 0.4 is usually called "impressive" by the camera reviewers.

The smallest lag times are turned in by digital SLR cameras. D-SLR prices start about $1,000 and go way up from there.
