Cocktail is a utility program that works well with all the default settings. Not knowing a great deal about Macs is not a problem as long as you recognize that fact and try not to mess with things that you are unsure of. We were all there once.
That said, starting up in Single User Mode does not load all of OS X and is for troubleshooting a problem.
This from the Cocktail Help file:
The ?Single User? mode* is an administrative mode used when certain tasks that demand total control of the system (such as disk reparation or system maintenance) are to be performed.
* The ?Single User? mode does not load the entire operating system so not all functions are available. To use the Aqua interface or other high-level aspects of Mac OS X, you need to type "exit" and press Return OR (note this is NOT and) reset PRAM (wireless keyboard and mouse will not work once the computer is started up in this mode, use a wired keyboard and mouse):
1. Shut down the computer.
2. Locate the following keys on the keyboard: Command, Option, P, and R.
3. Turn on the computer.
4. Press and hold the Command-Option-P-R keys. You must press this key combination before the gray screen appears.
5. Hold the keys down until the computer restarts and you hear the startup sound for the second time.
6. Release the keys.
Hope it helps you get back in business. If not, let us know

I was using a program called 'Cocktail' and altered a setting from 'standard login' (I am going from memory so these terms aren't neccessarily precise) to 'single user login' - foolishly without really understanding what this meant - and now when I turn my mac on all I get is a page full of text and I can't logon properly and I am unsure how to change it back. I don't know a great deal about macs and any help would be much appreciated. Thanks
