Format+Partition SATA HD with live CD

I want to format and partition a SATA hard drive to install Ubuntu on it. Is there any other way to format a hard drive (500GB) and then install Ubuntu on only 60GB of it?(because when I used the Ubuntu live CD the installer only had the option of using the whole hard drive which I do not want)
