Extract audio files from DVD

How do I go about extracting audio files from a DVD using Switch Sound Converter? I know I've done it before, but it's been a couple years and I can't remember how I did it.

I do transcription work and I need just the audio off a DVD-recorded interview.

You are given a choice of .mp3, OGG; ACC.mp4 AC3.
AVC Free's current interface is a little clunkier than it used to be when selecting your format. But it is free.
