I don't use Outlook so I can't experiment, but normally, when exporting items like an Address Book or Contacts, the Export wizard offers you the choice of which fields to add in to the exported file.
In addition, Export also offers a choice of file formats to which the file is created. If you are attempting to import such a file into Excel, you may find that exporting to a .csv file, (comma separated values), then importing that into Excel is the best method.
There will always need to be some adjustment to make to the resulting spreadsheet, especially if not all of the entries have all the same items included.

Microsoft Office Outlook 2003 will not export field "IM ADDRESS". (annoying)
I tried ContactGenie, but it is weird and will not export to Excel, only Notepad. And, maybe it is because I have not purchased it yet but it only exported ten of 2000 contacts.
Any help is much appreciated.
