Entrourage option question

My friend many states away uses Entourage for her email. When she replies to an email, the entire message to which she is replying is quoted. Is there a setting in Entourage that she can change to stop this unnecessary quoting? I don't have a Mac, so I can't explore myself.

Thank you!
