I have an EasyCAP USB Video converter but no longer have the software which came with the device. Any idea where I can get a copy. I have tried the EasyCAP Website which is not very helpful.

I can't tell if ezcap supplied the editor for download but CNET's CheapSkate TODAY!!! has a freebie you have to grab while you can.
