Easy, simple to use HTML generator needed or a class to take

I need a simple to use program. I have an old one that I bought from Godaddy.com about 3 years ago that works well, but they no longer support it. It works like a graphics program, then you tell it to upload and it does (WYSIWYG). It limits the size of photos, however, and only works with godaddy.com.

I need to be able to maintain a site on Rootsweb.com. I would also like to do a couple of other volunteer things, as well as maintain one of my own sites on godaddy.com.

I spent about 10 vacation days working on a site using Expression Web (volunteer thing on rootsweb). It didn't work right when I uploaded it and I had not idea what was wrong with it or how to fix it. I also had problems with the FTP part. I paid someone to fix it, but it needs updating.

I'm not interested in flash or anything complicated, but need to be able to post lots of photos. I'm a personal chef and need lots of good food photos on my own site.

Also, this year I need to do a web based ordering system for my business. I'm happy to pay someone to design it. It will need to be updated each week with new menus. Someone with a similar business has offered to give me a copy of her "open source, back end system".

I just need to know more about what I am doing. Any suggestions? A class, a webinar, a program?
