The only way this would impact game performance is if the game offers an option to load game data onto the hard drive to reduce load times, and you're out of space and can't do it. It can also impact saving your games if you run out of space.
I'd always leave at least 500MB or so free for saving games. The rest you can do whatever you want with.

I was wondering if it hurts gaming performance at all to load ones music and pictures onto the PS3's HDD.
Also, for those who do use the PS3 to listen to music, look at pictures etc... would it be better to hook up an external HDD for this purpose and leave the internal HDD for games, and add-on's.
