They want far too much information.
An article at http://www.nytimes.com/2003/11/28/national/28TWAN.html describes some of the distinctions between Texans and the rest of us, as well as some of the differences between urban and rural Texans.
The divergence between urban and rural residents in Texas certainly matches what I see among my patients here in NC. My personal impression (not addressed in the article) is that there are also correlations between education level and accent and idiom. I don't know if it's true in Texas, but among my patients it is fairly clear that the strongest accents (as judged by my non-native ears) tend to be present in the least educated patients. That may be because the more educated patients tend to move 'off the farm' but who knows?
