deleting xp

I remember when I was using win 98 and me.I think I could go to add and remove programs and uninstall either os.I am now on xp pro and xp home on my other pc.How do I uninstall these?They are not in add remove programs.

But today it's a rarity to see such.

What to do? Wipe out and install the OS of your choice.
