Is there any way to create a pdf/word document on a tablet that is stand alone and can be uploaded to online spaces(email, cloud drives and such)?

you really need to be more specific as to the type of tablet you have. Does it have windows, android, ios or other for its operating system. check out evernote. you can export as a pdf. there are many other apps that will do the same. You will have to check them out to find one that works for your usage. just search the specific app store for your tablet and you will find what you need.
