What they mean is largely that Quicken and Microsoft programmers are taking shortcuts, or haven't updated their code to reflect changes in the Cocoa API. Or in your case, since you're still on 10.5, it could be the other way around, and that they've changed some things around to reflect changes made in the cocoa API in 10.6 or 10.7 which are then non-fatal errors on 10.5.
Whichever one of those is true, it doesn't really matter, because there's nothing you can do to fix it, mostly because there's nothing to fix. Think of this as the equivalent of you walking down the sidewalk and stumbling a little when maybe a tree's roots have caused the sidewalk to bow upwards, and you weren't ready for it. You manage to correct your balance before you fall, so it's not a big deal. That is essentially what is going on with those messages.

I am using MacBook os x 10.5.8.
I have an icon on my dock about the console. When I open it there are quite a few msgs with a long string after STACK:
Here are two of them:
Quicken 2007 [4581] NSDocument controller Info.plist warning: the values of CFBundleTyreRole entries must be 'Editor', 'Viewer', 'None', or 'Shell'.
MS Outlook [4500] NSAutoreleaseNoPool (): object 0x180637fe of class NSConcreteData outoreleased with no pool in place - just leaking. STACK: a bunch of strings.
There are quite a few of these msgs, mostly concerning MS Outlook.
What do these mean and how do I fix them?
