I usually find this to work on the stock supported issues of the OS. Those that root or install other ROMs tend to have troubles.

Ploof,
After a recent update of my Samsung Galaxy SII to Android ICS, I seem unable to take a screen-shot anymore, that's sad.
I am aware of that the keys combination has been modified, and that it has become Volume Down + Power button, I tried, tried and tried, but it wouldn't work, either the volume goes down or I get the power options. I can't be doing this wrong, I am sure I'm pressing both at the same time, and I did every single thing you can do with these two keys, in vain...
I also tried installing an app for that instead, after some time I ended up with around seven apps, and none did the job. Some say my device isn't rooted ( What's that, actually ? ) , and some others are just offensive.
I was always able to take one before the update, it was easier, why isn't it working anymore ?
Thanks in advance,
Ad'.

I dropped hints that rooted and non-stock (images/roms from other than the maker) would be trouble.
Why I noted that was an attempt for you to reveal if a root or rom image was the reason.

Press and Hold The VOLUME Down and POWER BUTTON simultaneously to take a screenshots.
instead of pressing them down simultaneously. Hold the phone with your right hand. Then press the power button with your thumb (if you have the GS2) then immediately press the volume down with your middle finger while holding the power button with your thumb. You should see the screen shot taken. The file should be saved in your albums folder.
