Can I delete "My Music" on the iPhone menu?

I really hate "MY Music" on the Music menu on my iPhone since all my songs r listed. All I want is one playlist. How can I get rid of this?

You should be able to tell Siri to play that playlist without having to go through the music. You can also set it to show only music stored on the device, but all of your playlists would still be listed if you have multiples, they just won't show songs if they're not on the device. Also you can use the search feature to find that playlist by name. If having so much music at hand bothers you so much, you can hide the app in a folder and find it that way.

The "My Music" folder on my iPhone actually have all my music from iTunes and I am able to play them however my one playlist is there also. It is so stupid for Apple to put this fold on the iPhone. I can understand if the My Music folder contain all the songs in my playlist but not my entire library.

You can't do that as it's a stock app from Apple. However, you can move the app to the last page of home screen.
