I've got an IBM xSeries 335 server. I've got a C2T to KVM ordered and on the way. I was wondering in the meantime, I've got a N79 C2T Conversion Cable which has an RJ45 connection on the other end. Is there software available to emulate a KVM so I can console in using my Windows 7 laptop?

Not sure I follow your suggestion. I only have a single server and even if I did it looks like I would still need the C2T PS2 cable.
To get remote control of a server via that PS2 port is so intricate, may be costly that I can't guess why anyone would do that.
Why not use the usual remote administration tools and methods?

Over the years I've used dozens of remote administration methods. You didn't give enough detail but why can't you research or use the following titles?
VNC Server.
Telneting into the server to perform administration.
Sorry, we believe the NIC is fried, we can't reach it via IP. The only option we have left is to console in.
