Building new with new and old harddisk

I am building a AMD 64 3000 with Asus Mobo K8V Se Deluxe

Corsair ram value pack 1gb

2 x 80Gb Wd Caviar SATA Hdd

But.... I have an old 40gb Hdd with all my games installed, updated patches with each game and patch downloaded taking up several gb's

Can i transfer these games to new disks ? without having to reinstall them?

What raid setting do you recommend ? I kinda want speed ?

Any other advise would be great

"Programs" since about 1995 don't move well anymore. I've yet to see someone "move" Doom 3 from one machine to another. I have seen them install it here and there.
