Best operating system for an mp3 server

I'm not too sure if I'm in the right forum for this since it covers several subjects... but here it goes. My inlaws gave me their old PC which is rather out of date. It won't be of much use to me except to turn it into an mp3 server. I have wiped it clean, and am currently installing Windows 2k Professional on it, but started thinking it may not be the best OS for what I'm wanting. I have access to several operating systems, and am open to using Linex. I plan to use the machine to stream music over my network. Here are the system's specs:

500 MHz processor
10 GB hard drive (definately upgrading this, possibly w/ an external)
96 MB RAM

It's an HP, which I heard can be difficult to upgrade, so any advice on that would be great, too. Please let me know what you think.
