How long will it be before we see a dual core Intel-based Mac?

But not this year. Given that dual-cores are here and now (not plentiful, but real) and the beast that is video editing on the Apple would love it, my crystal ball predicts surprises in 2006.
The laptop however must wait for Yonah which is the dual core mobile CPU and there is a definite uptick to 64-bit right after that. Being so far out in time (1 year+), my outlook is that 64-bit is just kicking in and by that year many may write ho-hum to the 32-bit only Yonah and wait for the next tick.

Good luck to apple trying fitting a prescott in a mac mini without it blowing up!
Personally, Apple should have used AMD for better reliability.
Maybe it wasn't a Prescott, but look at http://www.wired.com/news/technology/0,1282,67664,00.html
Besides, it was "in the news" which dual-core was under consideration.
