Adobe Acrobat 8 Heater/Footer Editing

The Heater/Footer options in Adobe 8 are nice in some ways, but so far I haven't been able to use them effectively. If I add more than one header/footer (we have strict font and size requirements that differ between header and footer), I can only "update" the first one added when I select the Update option.

We used to use text boxes to place headers and footers, and then just use the footer option to insert the page number, but it was a hassle to paste so much on each page, and the options in version 8 seemed promising. For now we've had to return to copying and pasting headers and footers, but even THAT doesn't work well in 8 because of the new "improved" pasting features. Why on earth would they change it to paste in the dead center of the page?

Anyway, the real question is this: Is it possible to insert headers/footers of varying font and size, and then later edit them using the "update" option?
