Activity Log Software Help

I need a simple method for shift supervisors to log in activities and events throughout a 24-hour operation. The supervisors are often computer challenged. They must be able to just type in the notes without having to do much else. Automatic saves are a must. Cannot use on-line methods. Must be totally in-house. Gotta be secure from prying eyes too. HELP!
