ActiveSync questions

I put the new software on my iPhone last night and found it very easy to set up ActiveSync. I am 90% thrilled, but have a few nagging issues (questions).

1) I can see all my calendar appointments from my Exchange calendar while on the phone. I can add appointments from the phone just fine. However, I can not edit the time of any appointment that was added in Outlook (not on the iPhone) from the phone. Can anyone validate that this is proper functionality, or do I have a permission setting incorrect in my Outlook Calendar?

2) Before I turned on Calendar sync on the phone, I had multiple calendars on the phone - VERY COOL. However, once I turned on syncing for the calendar, I am back to one calender. Again, is this normal?
