About settings for Panasonic TC-P60VT60

I have just purchased Panasonic TC-P60VT60 and applied the settings provided here, at the forum:

I have a couple of questions with regard to the settings. Sorry if they sound naive but I am not a technical person but would like to be sure I understand it right.

As advised, I set the screen format: JUST. But while watching some programs, especially news, I have an impression that the faces are a little elongated. When I switch to FULL, they look more natural to me. Is it just my impression or it might be true due to the format?

The sharpness, I would prefer to make the picture a little sharper.

Do I understand right that if I change the two settings (FORMAT and sharpness) to my liking, it would not affect other settings.
