96 Jeep Cherokee acceleration problem

Have a 96 Jeep Cherokee 4.0L. Bought it used and ran fantastic for a year. All of a sudden it developed a stalling problem. Mechanic said it was the IAC valve. Replaced it and that problem was fixed. I knew it needed a new water pump so I had it replaced and that seems to have created another problem. Now it will run great for a while but when it's been running for a while it will all of a sudden just bog down. Step on the gas and nothing happens. Had a lot of rattling underneath and knew about the cat recall. So I had that replaced by the dealer thinking that would fix the bogging problem. No such luck! It's not throwing any codes, at least the engine light isn't coming on, haven't actually checked for codes. Had a new fuel filter put on a couple of months ago, or at least I paid to have one put on. I am baffled. Don't know where to start and can't afford to change every sensor in hopes that it will fix it. Would be nice if the engine light would come on so I could read the codes. Any advice would be great.
