Converting to black and white

Do you have a preferred way of converting color shots to B&W in Photoshop, Aperture, or some other app?

Naked lenses

Do you have a particular UV Filter or other filter you use to protect your lenses or do you leave them 'naked'? I tried a couple Tiffin UV filters for my Nikon lenses and got horrible ghosting from spot light sources (locomotive headlights). I immediately took them off and threw them in the back of drawer never to be seen again, but I'm a little hesitant to shoot 'unprotected'.Thanks a bunch!
