FaxReceiver adds manual send/receive to FAXstf 5.0 bundled version

As stated in a FAQ for the FAXstf version bundled with the iMac and iBook: "The FAXstf 5.0 software does not include any manual send or receive capabilities. You can, however, upgrade to FAXstf Pro 5.0 to obtain those options."

Or you can download FaxReceiver - which gives this feature to the bundled version. "Put it into the Apple Menu Items-folder. When the phone rings and you lift the receiver, if you then hear the fax sound, start FaxReceiver from the Apple Menu."
