Portable induction cookers are a great way to delve into the relatively new world of induction cooking. A lot of mystery surrounds the appliances and which pieces of one's current arsenal of cookware can be used. Here's the deal: as long as it is ferromagnetic it is good to go; glass, ceramic, and solid copper won't work, so going with a full-size cooktop isn't for everyone. Luckily, going the small and portable route, doesn't mean compromising on what the induction burner can do.

The Viante CUC-30DC Induction Cooker and Grill measures just over 20 inches wide by 14 inches long and is only 2 inches high. It has a larger footprint than most portable induction cookers, but for a good reason: it becomes a griddle. A secondary attachment affixes to the heat source via an included support frame and transforms the versatile appliance into a ready-to-go griddle.

In action, the 1,400-watt gadget features seven power levels designed to accommodate varying needs. An easy-to-read LCD panel is situated on the right side of the unit, conveniently displaying cooking modes. To use an induction cooker, all that is needed is cookware that is magnetic in nature. Having one that is ready to convert to a griddle is certainly an attractive option.
