We previously noted that you can remove a Menu Extras item from the menu by simply dragging it off while holding the Command key. We failed to mention that the reverse is also true. You can add an item by dragging it to the menu. For example, the Displays extra was not installed by default on our menu. We fixed this by going to the Menu Extras folder in System/Library/Core Services and dragging the Displays icon to the menubar. This only works if your Mac supports use of the item. Thus dragging the AirPort extra will have no effect if you do not have an AirPort card installed.

Update: As Scott Lahteine points out, there is a simpler way, at least for Displays: Enable the "Show displays in menu bar" option in the Displays System Preferences.
