You may need to talk to the manufacturer of the device in your car. Furthermore, since you didn't specify what phone model or car will limit the amount of help you will get here.

im not sure you're gonna like my idea but if you're using a Droid X there's a way to go back from android 2.3 to android 2.2 ( I did it for different reasons than you) I would recommend you to visit droidxforums dot com if you're interested.

There is an app that is called Sanity that will answer a call automatically. It also has an option to only auto answer if there is a headphone plugged in. I don't know if that particular option works as that option is only available in the paid version. I don't want to buy it to find out if it works. You could buy it and see if it works or not. If it does than fine, if it doesn't than just get a refund. Remember, though, that you only have 15 minutes to test it and get a refund. After 15 minutes the sale is final.
