I'd like to get my kids a computer for Christmas, and I'd like to go with Apple for its ease of use. Which one should I get them?

So, we're guessing you know that by choosing Apple, you're ruling out most games. Maybe that's on purpose.
As a general guideline, the more money you spend on processing power and memory, the longer the system will last, so we encourage you to get the best system you can afford. The most powerful Apple desktop out right now is the Apple Power Mac G5 Quad. Of course, it'll set you back about $3,330. We recommend that system only if your children have shown a commitment to video or photo editing, and if your wallet permits.
For general use, we gave an Editors' Choice to the iMac G5 after its recent specs and features upgrade. There are few better systems out there, with features such as Apple's Front Row media software and its excellent iLife '05 suite for basic digital media editing. The sleek design and overall power don't hurt either.
If you already have a monitor, the Mac Mini is an acceptable starter system. The SuperDrive version has a double-layer DVD burner and is fast enough for most day-to-day apps.
